"BESTER", our newest farm raised caviar is a crossbreed of female Beluga (huso huso) and male Sterlet sturgeon (Acipenser ruthenus) from the Caspian Sea. This caviar looks and tastes very similar to Beluga and has medium sized eggs that range in color from light gray to black with a wonderfully delicate flavor and finish.
