This is a fun take on the classic summer salmon & peas menu favorite. It's really quick, fresh and healthy.
Saffron threads– 1 tsp
Angel Hair Pasta – ½ lb
Grilled Onion – 1 each, sliced
Frozen or Fresh Peas – 1 cup cooked
Vegetable Stock – 1 cup
Unsalted Butter – 4 Tbsp
Plain Greek yogurt – ¼ cup
Salmon Caviar – 1 ounce
Fresh Dill or Chives – to garnish
1.Boil water for the pasta and add the saffron threads, cook angel hair until done.
2.While pasta is cooking, heat together gently, sliced grilled onion, peas, stock and butter.
3.Plate the pasta, top with 1 Tbsp of plain Greek yogurt & ¼ ounce salmon caviar then drizzle peas and onions around the pasta. Garnish with fresh dill or chives if desired.
