Caviar Star Recipe #20 - Rack of Lamb with Paddlefish Caviar and Arugula Pesto

Lamb Chops and Paddlefish Caviar is an excellent combination for the holiday season. Enjoy the recipe enclosed!

(serves 4 - 8)

INGREDIENTS
Rack of lamb chops
EVO
Salt & pepper
Arugula
Parmesan cheese
Garlic cloves
Paddlefish caviar

2 Tbsp. + 2 Tbsp.
To taste
2 cups
1/4 cup
2
2 oz.

INSTRUCTIONS:

  1. Sear the 8 lamb chops in 2 Tbsp. of Extra Virgin Olive Oil to the temperature desired.
  2. While the lamb chops are searing, make the pesto in a food processor by combining the arugula, Parmesan cheese, garlic and 2 Tbsp. of Extra Virgin Olive Oil and processing until smooth.
  3. Top the lamb chops with an equal spoonful of pesto.
  4. Top the pesto with an equal spoonful of Paddlefish caviar and serve immediately. 
  5. Enjoy!
