Lamb Chops and Paddlefish Caviar is an excellent combination for the holiday season. Enjoy the recipe enclosed!
(serves 4 - 8)
|Rack of lamb chops|
Salt & pepper
2 Tbsp. + 2 Tbsp.
- Sear the 8 lamb chops in 2 Tbsp. of Extra Virgin Olive Oil to the temperature desired.
- While the lamb chops are searing, make the pesto in a food processor by combining the arugula, Parmesan cheese, garlic and 2 Tbsp. of Extra Virgin Olive Oil and processing until smooth.
- Top the lamb chops with an equal spoonful of pesto.
- Top the pesto with an equal spoonful of Paddlefish caviar and serve immediately.
